Pizza Toppings Ingredients
1 1/2 cups sundried tomatoes
6-8 marinated artichokes
200g black olive tapenade/paste
small bunch basil leaves

Cashew Cheese Ingredients
1 cup cashews, soaked for 2-4 hours
2 tsp savoury yeast flakes
1 garlic clove, crushed
1 cup water
salt and pepper

Pizza Base Ingredients
760g “00” flour (pizza dough flour)
1tsp table salt
15g castor sugar
14g dried yeast
450ml luke warm water
50ml almond milk
60ml extra virgin olive oil

Method
Combine the flour salt and sugar, and make a well in the centre.
Dissolve the yeast in 150ml of the water and pour into the well.
Add the remaining water and milk and mix to form a dough.
Turn the dough onto a floured bench and knead until smooth.
Start to work in the olive oil bit by bit.
Put the dough in an oiled bowl, cover it with a tea towel and place it
in a warm area. Leave it for 1hour to double in size.
After an hour, remove the dough and punch all the air out of it.
Divide it into four equal pieces, cover it with a tea towel and leave
it again for another 30-45minutes.
When your dough is done either roll them out or just use your fingers (as I do) to spread them over a pizza stone.

Spread each pizza base with the olive tapenade, then add the sundried
tomatoes. Peel the artichokes apart and spread them over the pizza.
Put the pizzas in an oven on 180C for about 15 minutes.

Put the cashews, savoury yeast flakes, garlic, salt and pepper and water for the cashew cheese in a food processor or vitamin and process until really smooth. Add more water as needed so that it is the right consistency to drizzle over the pizzas. Drizzle this over the pizzas as they come out of the oven and shred some basil leaves over the top.

If you’re short on time you can always use some yummy pre-made pizza bases!
